So what exactly do we get paying for the final version that we don't in the free one? I'm happy to support a well developed project, but stuff like a different color palette is not a worthy premium. If the free version simply has less content, why not call it a demo?

I don't know why it's called the "Free Version", because to get it you actually have to donate on itch.io, which is typical.
Also there is no "paid" or "premium" version for the game so far I can see.
The game is simply not done and all new/following versions will probably cost more.
So it's in fact basically a Demo.
